Strawberry, Walnut, and Spinach Salad

With all of this not so wanted weather lately, all we keep thinking about is when will summer be here?  Try this salad to remind you of summer, because even if it's not here yet it doesn't mean you can't eat like it is.

Ingredients
  • 1 bag fresh spinach, thick stems removed
  • 1 pint  strawberries, ends trimmed and quartered
  • 1 cup  walnuts, toasted and coarsely chopped
  • 1/4 large  red onion, thinly sliced
  • Balsamic vinaigrette
Directions
1.Empty bag of spinach into a large serving bowl.
2.Add in strawberries, walnuts, and red onion.
3.Pour over balsamic vinaigrette and toss to coat. Serve immediately.

Buffalo Chicken Dip

 Buffalo Chicken Dip (From allrecipes.com)  

My roomate decided to make Buffalo Chicken Dip tonight and it smelled amazing!  So I decided to share the recipe with everyone else, I hope you attempt and enjoy!

Ingredients

  • 2 (10 ounce) cans chunk chicken, drained
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup Ranch dressing
  • 3/4 cup pepper sauce (such as Frank's Red Hot®)   
  • 1 1/2 cups shredded Cheddar cheese
  • 1 bunch celery, cleaned and cut into 4 inch pieces
  • 1 (8 ounce) box chicken-flavored crackers

Directions

  1. Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

Welcome to my blog.  Here you will find many different recipes that I have found to be very delicious and simple to make.  Being in college now it's very hard to find things to cook for yourself.  Besides looking for recipes that are easy I look for ones that don't require a lot of my time, because I am always on the go.  My hope is that other people that struggle with cooking will see these recipes and also attempt to cook them and maybe even become a great chef!
